Black Eyed Peas-Instant Pot
Ingredients
  • 1 1/4 cup dry black-eyed peas (unsoaked)
  • 3 1/2 cups cold water
  • 1 1/2 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 cup chopped onion
  • 2 cloves glaric, minced
  • 2-3 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 bay leaf
Directions
  1. Rinse and drain the black eyed peas.
  2. Add black eyed peas and water to the Instant Pot.
  3. Add the chopped onions, minced garlic, salt, onion powder, garlic powder, smoked paprika, thyme, and bay leaf to the Instant  Pot.
  4. Select Pressure Cook (High Pressure) and set the cooking time to 16 minutes (or 14 minutes if you prefer firer peas)
  5. Allow the pressure to release natrually for about 10-15 minutes.
  6. Open the lid, stir, remove the bay leaf, and serve.
Brown rice instant pot recipe card
Brown Rice-Instant Pot
Ingredients
  • 1 cup long-grain brown rice
  • 1 cup cold water or vegetable broth
  • Pinch of salt
Directions
  1. Rinse the brown rice and drain.
  2. Add the rice, water (or vegetable broth), and salt to the Instant Pot. Stir to combine.
  3. Secure the lid and set the valve to the Sealing position.
  4. Select Pressure Cook (High Pressure) and set the cooking time to 15 minutes.
  5. Allow the pressure to release naturally fro 5-10 minutes.
  6. Open the lid and stir. Adjust salt to taste.
  7. Fluff the rice with a fork and serve.
