Black Eyed Peas-Instant Pot
Ingredients
- 1 1/4 cup dry black-eyed peas (unsoaked)
- 3 1/2 cups cold water
- 1 1/2 tsp salt
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 cup chopped onion
- 2 cloves glaric, minced
- 2-3 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
- 1 bay leaf
Directions
- Rinse and drain the black eyed peas.
- Add black eyed peas and water to the Instant Pot.
- Add the chopped onions, minced garlic, salt, onion powder, garlic powder, smoked paprika, thyme, and bay leaf to the Instant Pot.
- Select Pressure Cook (High Pressure) and set the cooking time to 16 minutes (or 14 minutes if you prefer firer peas)
- Allow the pressure to release natrually for about 10-15 minutes.
- Open the lid, stir, remove the bay leaf, and serve.
Brown Rice-Instant Pot
Ingredients
- 1 cup long-grain brown rice
- 1 cup cold water or vegetable broth
- Pinch of salt
Directions
- Rinse the brown rice and drain.
- Add the rice, water (or vegetable broth), and salt to the Instant Pot. Stir to combine.
- Secure the lid and set the valve to the Sealing position.
- Select Pressure Cook (High Pressure) and set the cooking time to 15 minutes.
- Allow the pressure to release naturally fro 5-10 minutes.
- Open the lid and stir. Adjust salt to taste.
- Fluff the rice with a fork and serve.
