Breakfast Banana Split
Ingredients
- 2 pitted dates
- 1/2 cup of raw cashews
- 1/2-3/4 cup water
- 3 scoops leftover oatmeal
- Salt to taste
- Fruit toppings (optional)
Directions
- Warm leftover oatmeal with a little added water in a saucepan.
- Use a long, narrow dish (similar to what a banana split would be placed in) and cut a banana lengthwise.
- Lay the banana open in the dish and using an ice cream scoop, add three scoops of oatmeal in the center (like you would with ice cream in a regular banana split).
- Blend the cashews, dates, water or plant-based milk, and a pinch of salt for taste.
- Drizzle the cashew-date sauce on top of the meal.
- Add fruit toppings as desired and serve.
Notes
- You may also use a plant-based milk instead of water.
Granola
Ingredients
- 4 cups of rolled oats
- 1 1/2 cups of nuts (can use a variety of your choice)
- 1 tsp sea salt
- 1/2 cup maple syrup (or honey)
- 1/2 cup olive oil
- 2/3 cup of dried fruit (use any of your choice)
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Combine the oats, nuts, and sea salt in one mixing bowl and stir.
- Pour the maple syrup and oil into the mixing bowl. Best to use both hands to ensure a thorough mixture.
- Add mixture to a baking sheet with parchment paper and spread into an even layer.
- Bake for about 20 minutes, stirring halfway.
- Allow the granola to cool, then add the dried fruit and mix.
Notes
- Store in an airtight container at room temperature.
